French fries are one of my guilty pleasures, and these oven-baked garlic aioli fries hit the spot every time. They start with a supermarket shortcut for ease and are paired with a quick, dressed-up mayo that gives off aioli vibes.
Fries are a must-have sidekick for everything from chicken to burgers, including easy homemade sloppy joes, Captain Crunch chicken tenders, and brown sugar ham and cheese sliders. - Frozen french fries: I prefer crinkle cut because the ridges catch all the zesty seasonings. Grown in Idaho, Alexia and Ore-Ida are quality brands most supermarkets offer. Through trial and error, I have found that some store-brand varieties also offer good quality.
- Seasonings: Reach into your pantry for these staples: onion powder, garlic powder, oregano, salt, and pepper. Feel free to add other spices, such as chili powder, cumin, or smoked paprika.
- Garlic does double duty in this recipe. First, the garlic is roasted in olive oil and then blended with mayonnaise to create a scrumptious dip. Secondly, the french fries are tossed with some of this garlic-infused oil for an extra punch of flavor.

How to Make Garlic Aioli Fries
Step 1: Combine olive oil and garlic cloves in a small saucepan. Cook over low heat until the garlic is fork-tender and has turned golden, about 30 minutes.
Step 2: Strain out the garlic and reserve the oil. Combine mayonnaise, roasted garlic cloves, lemon juice, salt, and pepper in a mini food processor. Blend until smooth.
Step 3: Add the fries to a large zipper-top bag. Add two tablespoons of the reserved garlic oil. Seal the bag and shake until the fries are evenly coated with the oil. Add the seasonings and shake to coat.
Step 4: Transfer the fries to a parchment-lined half-sheet pan. Bake according to the package directions. I baked these at 425℉ for 25-35 minutes. Serve with garlic aioli.

- For extra-crispy fries, place the sheet pan in the oven while the oven is preheating, then transfer the fries to the hot pan.

- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- ¼ teaspoon Kosher salt
Instructions
- Add the olive oil and garlic cloves to a small saucepan. Simmer on low until the garlic is golden brown and fork tender, about 30 minutes. Strain the garlic cloves out (to add to the mayo) and reserve the oil.½ cup olive oil, 6 cloves garlic
