- Frozen french fries - I prefer crinkle cut because the ridges catch all of the zesty seasonings. I often buy Ore-Ida but I have found that many store-brand varieties offer good quality as well.
- Seasonings - Reach into your pantry for these staples: onion powder, garlic powder, oregano, salt, and pepper. Feel free to add other spices such as chili powder, cumin, or smoked paprika.
- Garlic does double duty in this recipe. First, the garlic is roasted in olive oil and then blended with mayonnaise to create a scrumptious dip. Secondly, the french fries are tossed with some of this garlic-infused oil for an extra punch of flavor.

Roasted garlic aioli
- Combine olive oil and garlic cloves in a small saucepan. Cook over low heat until the garlic is fork-tender and has turned golden in color, approx. 30 minutes.
- Strain out the garlic and reserve the oil. In a mini food processor, combine mayonnaise, roasted garlic cloves, lemon juice, salt, and pepper. Blend until smooth.
TIP: Reserve the extra garlic-infused oil to use in other recipes. Add to dressings, sauces, pasta, or roasted vegetables.
French fries
- Add the fries to a large zipper-top bag. Add some of the garlic oil reserved from roasting the garlic. Seal the bag and shake until the fries are evenly coated with the oil. Add the seasonings and shake to coat.
- Transfer the fries to a parchment-lined half sheet pan. Bake according to the package directions. For these crinkle-cut fries, I baked them at 425 degrees for 25-35 minutes.

- 2 tablespoons garlic oil (from above)
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- ¼ teaspoon Kosher salt
- ½ teaspoon dried oregano

- 6 cloves roasted garlic (from above)
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- ¼ teaspoon black pepper
- ¼ teaspoon Kosher salt
Instructions
Roasted garlic oil
- Add the olive oil and garlic cloves to a small saucepan. Simmer on low until the garlic is golden brown and fork tender, about 30 minutes.
- Strain the garlic cloves out and reserve the oil.
Garlic aioli
- In a small food processor, combine the mayonnaise, roasted garlic, lemon juice, salt, and pepper. Blend until smooth. Transfer to a serving bowl.
French fries
- Preheat the oven according to the package directions.
- Put the french fries in a large zipper top bag. Add 2 tablespoons of the reserved garlic oil, seal the bag, and toss to coat the fries evenly.
- Add the seasonings to the bag. Seal and toss to evenly distribute the spices.
- Transfer the fries to a parchment-lined sheet pan. Bake according to package directions, flipping the fries halfway through.
- Serve immediately with garlic aioli.
