I'm obsessed with these spinach feta chicken burgers! They are moist and are loaded with so much fresh flavor. And the lemon dill sauce is AMAZING! You definitely don't want to skimp on this sauce.
These burgers come together in about 20 minutes, so they're perfect for weeknight meals. I like serving with creamy cucumber salad, pasta salad, or watermelon feta salad.
Ingredients
- Ground chicken or turkey can be used.
- Fresh spinach - I greatly prefer chopped fresh spinach in these burgers. It gives the burgers a very tender bite. Frozen spinach can be stringy and can create a less pleasant texture.
- Feta cheese - Always buy a block of feta and crumble yourself. Block cheeses stay fresher and retain more moisture than pre-crumbled. Greek sheep's milk feta is my absolute favorite.
- Breadcrumbs - Both plain and seasoned are fine. Use what you have in your pantry.

- Add the feta, spinach, breadcrumbs, and seasonings to a mixing bowl. Mix with a fork.
- Add the chicken. Using a fork, blend the ingredients until fully combined. Shape into 4 patties.
- Heat a non-stick skillet over medium heat. Add 2 teaspoons of oil.
- Cook the burgers for 4-5 minutes until brown. Flip. Cover and cook for another 4-5 minutes or until the burgers reach an internal temperature of 165℉.
- Meanwhile, for the sauce, add mayonnaise, lemon juice, and dill to a small bowl. Stir together. Season to taste with salt and pepper.
- Build the burger. I love using pea sprouts, sliced tomato, and dill lemon mayo.

- Any sort of greens - lettuce, spinach, pea shoots, arugula
- Slices of red onion, tomato, or cucumber
- Creamy sauces like dill lemon mayo or Tzatziki
Expert Tips
- Don't overmix. For tender burgers, mix just enough to incorporate the ingredients. PRO TIP: First mix together all of the ingredients EXCEPT the chicken. Then, add in the chicken and mix until just combined. A fork is perfect for this and prevents overworking the chicken.
- Use block feta cheese. Cheese in block form stays fresher and retains more moisture than pre-crumbled cheese.
- Cook the burgers in a skillet. This creates a golden brown crust over the whole surface of the burger.
- Cover the skillet while cooking on the second side. This helps the chicken cook through completely without drying out.
- Use an instant-read thermometer to ensure the chicken reaches a safe internal temperature of 165 degrees.

Chicken burgers
- 2 cups fresh baby spinach (packed, then finely chopped)
- 3 ounces feta cheese (crumbled)
- ¼ cup breadcrumbs
- 2 teaspoons minced garlic
- ½ tablespoon lemon zest
- ¼ teaspoon onion powder
- ¼ teaspoon Kosher salt
- ¼ teaspoon black pepper
- 1 pound ground chicken
- 2 teaspoons olive oil (or similar, for cooking the burgers)
Lemon dill mayonnaise
- 6 tablespoons mayonnaise
- 1 teaspoon chopped fresh dill
- ½ lemon (juiced)
- salt and pepper (to taste)

- pea shoots, lettuce, or fresh spinach
- tomato slices
Instructions
- In a mixing bowl, combine the spinach, feta, breadcrumbs, garlic, lemon zest, onion powder, salt and pepper. Mix to blend together.
- Add the ground chicken. Using a fork, gently incorporate the chicken with the spinach and feta mixture. Mix until just combined. Shape into 4 patties.
- Heat a large skillet over medium heat. Add oil and add the burgers. Cook for 4-5 minutes. Flip. Cover and cook another 4-5 minutes until the internal temperature of the burgers reaches 165℉.
