A fun toast brunch menu is absolutely perfect for New Year's—or any weekend, for that matter. Putting food out that can be nibbled on casually throughout the morning and early afternoon is one of my favorite ways to nosh.
Variations
This toast brunch menu features five ideas - both sweet and savory. With a variety of spreads and toppings, it's fun to customize and create your own flavor combinations.

- Avocado toast is a favorite brunch dish. Top toast with smashed avocado, red onion, and Everything Bagel seasoning. Or try Avocado Everything Bagels.
- Spinach and tomato - top toast with whipped chive cream cheese, baby spinach, and sliced tomato, and finish with a sprinkle of flaky salt or Everything bagel seasoning.
- Beef and horseradish - top toast with horseradish sauce, thinly sliced beef tenderloin, red onion, and top with another dollop of horseradish sauce. This is a great way to use leftover beef tenderloin (from your holiday dinner, perhaps). Deli-sliced roast beef can also be used.
- BLT - this open-faced version of a classic features toast topped with chive cream cheese, bacon, lettuce, and tomato.
- Raspberry cream - this sweet toast features cinnamon raisin bread topped with Greek yogurt, raspberry preserves, pecans, and a drizzle of honey.
Ingredients
A toast brunch menu should include a variety of sweet and savory fixings to provide plenty of options. In addition to the flavor combinations highlighted earlier, I'm sharing lots of ingredient suggestions here for inspiration.
- Bread/toast - rye, pumpernickel, sourdough, whole grain, olive bread, or cinnamon raisin
- Spreads - cream cheese, ricotta, Greek yogurt, fruit preserves, hummus, peanut butter, and other nut butters.
- Toppings - thinly sliced beef or ham, bacon (try Spiced Rosemary Bacon), smoked salmon, sliced hard-boiled eggs, onion, tomato, greens, avocado, nuts, sliced bananas, strawberries, or apples, dried fruit, Brie, crumbled feta, goat cheese, or blue cheese, fresh herbs
Expert Tips
Putting together a toast bar is quite easy - and fun too! There's very little cooking and prep work involved. Simply gather the ingredients and arrange buffet-style for everyone to help themselves.
- Arrange the bread in baskets. Line the basket with a linen napkin for a special touch.
- Put spreads in small bowls or ramekins with small spoons or spreaders for easy access.
- Arrange sliced meats and bacon on one platter and sliced onions and tomatoes on another.
- Wait to slice fresh fruit until right before serving. Arrange on a platter.
- Serve crumbled cheeses, dried fruit, and nuts in separate small dishes.
- Include seasonings like flaky salt, Everything bagel seasoning, and chopped fresh herbs for garnish.

Ingredients
Avocado toast
- 2 slices pumpernickel bread (or bread of choice)
- 1 avocado
- ½ lime (juiced)
- 1 slice red onion
- everything bagel seasoning
Spinach and tomato toast
- 2 slices rye bread (or bread of choice)
- 2-4 tablespoons whipped chive cream cheese
- 10 leaves baby spinach
- 4 slices tomato
Beef and horseradish toast
- 2 slices pumpernickel bread (or bread of choice)
- 2 tablespoons horseradish sauce
- 4 slices beef tenderloin (or deli roast beef)
- 1 slice red onion
BLT toast
- 2 slices rye bread (or similar)
- 2-4 tablespoons whipped chive cream cheese
- 4 slices bacon (cooked)
- 2 leaves romaine lettuce (or iceberg )
- 2-4 slices tomato
Raspberry Cream toast
- 2 slices cinnamon raisin toast (or whole-grain or similar)
- 2-4 tablespoons greek yogurt
- 2-3 teaspoons raspberry preserves
- pecans
- honey
Instructions
Avocado toast
- Toast the bread. Set aside
- Mash the avocado with the lime juice. Season to taste with salt and pepper.
- Spread the mashed avocado on the toast. Top with the red onion and sprinkle with Everything bagel seasoning.
Spinach and tomato toast
- Toast the bread. Spread with the cream cheese. Top with spinach and tomato slices. Season with flaky salt and pepper.
Beef and horseradish toast
- Toast the bread. Top with horseradish sauce (Note 1), beef, and red onion. Add a dollop of horseradish sauce, if desired.
BLT toast
- Toast the bread. Spread with cream cheese. Top with bacon, lettuce, and tomato. Season with salt and pepper.
Raspberry Cream toast
- Toast the bread. Spread the yogurt on the toast. Top with raspberry preserves. Garnish with pecans and a drizzle of honey.
Notes
- Use store-bought horseradish sauce or make from scratch: to ½ cup of sour cream, add 1 tablespoon prepared horseradish, a dash of Worcestershire sauce, and a pinch of white pepper. The amount of horseradish can be adjusted to taste.
