- Mayonnaise provides richness to this dip. With just a few ingredients, be sure to use good-quality mayonnaise for the best flavor. I prefer Duke's or Hellman's. Both full-fat and light mayo work in this recipe. Avoid low-fat or fat-free varieties. Miracle Whip is not recommended in this recipe.
- Gruyere cheese provides a wonderful nuttiness. Swiss cheese can be substituted, although it will yield a milder flavor. Use freshly shredded cheese for the best flavor and melting quality.
- Sweet onions like Vidalia, Maui, and Walla Walla are milder than others and provide a sweet flavor. If sweet onions are not available, yellow onions can be used.

How to Make Hot Onion Dip
Step 1: Cook onions in butter until softened.
Step 2: Combine onions, mayo, and garlic in a mixing bowl.
Step 3: Fold in the shredded cheese.
Step 4: Transfer the mixture to a baking dish. Bake at 400℉ for 15-20 minutes until lightly browned and bubbling around the edges.
Step 5: While the dip bakes, cook the shallots in butter until brown and crisp.
Step 6: Drain the shallots on a paper towel. Add them to the top of the dip and serve.

Ingredients
- 1 cup diced sweet onion
- 3 tablespoons butter (divided)
- 1 cup mayonnaise
- 1 cup shredded Gruyere cheese
- 1 clove garlic (grated)
- 1 shallot (sliced)
- black pepper (to taste)
Instructions
- Preheat the oven to 400℉.
- In a small skillet, heat 2 tablespoons butter over medium heat. Add the onions and cook for 5 minutes until soft and translucent.
- Add the onions to a mixing bowl and combine with the mayonnaise and garlic. Fold in the Gruyere cheese and season with pepper.
- Transfer the mixture to a small baking dish. Bake for 15-20 minutes until golden and bubbly.
- Meanwhile, in the same skillet used to cook the onions, add the remaining 1 tablespoon butter and heat over medium. Add the shallots and cook until golden brown. Transfer the shallots to a paper towel-lined plate to drain.
- After removing the dip from the oven, garnish with the fried shallots. Serve with chips or crackers.
