Must-make treat
I'm turning s'mores into an easy no-campfire treat with these Peanut Butter S'mores Bars. Loaded with graham cereal, chocolate, and plenty of gooey marshmallow, the addition of peanut butter only makes these bars more irresistible.
Why these bars are so good
For another campfire-free s'mores treat, try this S'mores Quesadilla.
Ingredients
- Golden Grahams cereal - Replaces traditional crisped rice cereal to give the graham cracker s'more vibe.
- Peanut butter - I like creamy peanut butter because it melts smoothly into the marshmallow mixture. Use crunchy peanut butter to add another layer of texture to the bars.
- Marshmallows - I love folding in extra marshmallows to the cereal mixture for an extra pop of chewiness.
- Chocolate - What's a s'more without chocolate? We're folding chips into the marshmallow mixture and topping the bars with more chocolate.
Step-by-step instructions

- Line a 9x13 pan with parchment paper and set aside.
- Add the cereal to a large zipper-top bag and crush into smaller pieces. Set aside.
- In a large, heavy-bottomed pot set over medium-low heat, add the butter and peanut butter. Stir until melted.
- Add the marshmallows and stir until fully melted and smooth.
- Add the crushed cereal and stir to combine. Add the chocolate chips and extra marshmallows. Fold together. NOTE: Don't worry if the chocolate chips start melting into the warm mixture. S'mores are all about melty gooey ingredients.
- Quickly transfer the mixture to the prepared pan. Press into an even layer.
- Using a double-boiler or the microwave, melt the chocolate, stirring until completely smooth.
- Double-boiler: Place a glass bowl over a saucepan of simmering water. Be sure the bottom of the bowl does not touch the water. Add the chopped chocolate and stir until completely melted.
- Microwave: Add the chopped chocolate to a glass bowl. Heat on high for 20-30 second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Pour the melted chocolate over the marshmallow bars and spread evenly. Top with extra crushed cereal.
- Allow the bars to set up at room temperature.
- Slice and serve. PRO TIP: Use this 5 wheel pastry cutter for perfectly even squares every time. This is my favorite tool for cutting bars, brownies, fudge, and more!
Tips for making cereal bars
- Line the pan with parchment paper so you can remove the bars from the pan for ease of cutting and serving. Spray the pan with cooking spray first to help hold the parchment in place when spreading the sticky mixture.
- Use a silicone spatula or spoon to mix the sticky marshmallow mixture. You can also spray the spatula with cooking spray to further prevent the mixture from sticking.
- Spray your fingers with cooking spray before pressing the mixture into the pan.
- Store the bars in an airtight container at room temperature.

Peanut Butter S'mores Bars

Ingredients
- ½ cup unsalted butter
- ⅓ cup creamy peanut butter
- 16 ounces miniature marshmallows
- 6 cups Golden Grahams cereal (lightly crushed plus extra for topping)
- ½ cup miniature chocolate chips (for folding into the cereal mixture)
- 1 cup miniature marshmallows (for folding into the cereal mixture)
- 8 ounces bittersweet baking chocolate (or semi-sweet, chopped)
Instructions
- Line a 9x13 inch cake pan with parchment paper. Set aside. (Note 1)
- Add the cereal to large zipper top bag and crush into smaller pieces. Set aside.
- In a Dutch oven set over medium-low heat, add the butter and peanut butter. Stir until melted. Add 16 ounces of marshmallows and stir until melted and the mixture is smooth.
- Add the cereal and stir to coat with the marshmallow mixture. Quickly fold in the chocolate chips and remaining 1 cup of marshmallows. Transfer the mixture to the prepared pan and spread into an even layer. (Note 2)
- Melt the bittersweet chocolate in a double-boiler or microwave. (Note 3) Pour over the marshmallow mixture and spread evenly. Top with extra crushed cereal. Allow to set at room temperature.
- Slice into 24 squares and enjoy! Store the bars in an airtight container at room temperature.
Notes
