S'mores are a summertime classic, and we're taking them indoors with these S'mores Quesadillas. No fire is required - just a griddle or a skillet. Rain or shine, you can enjoy these s'mores any time.

What are S'mores quesadillas?
S'mores quesadillas are folded tortillas filled with classic s'more ingredients. The tortillas are coated with cinnamon sugar on the outside which caramelizes as the chocolate and marshmallows melt into gooey perfection.

Ingredient notes
- Tortillas - I prefer plain flour tortillas for this.
- Chocolate - Hershey Milk Chocolate bars are traditional in s'mores and they melt beautifully.
- Marshmallows - I use large marshmallows for the ultimate gooeyness. Mini marshmallows also work fine.
- Graham crackers - Keeping with the traditional s'mores vibe, the graham crackers add texture to the gooey, melted filling of these quesadillas.
- Cinnamon sugar - Creates a caramelized texture on the outside of the quesadilla.
Step-by-step instructions

- Preheat a griddle over medium-low heat.
- Stir together the sugar and cinnamon. You will have extra cinnamon sugar - save it to use on your morning toast.
- Spread one side of each tortilla with softened butter. Sprinkle cinnamon sugar over the top. Alternatively, use cinnamon sugar butter on the tortillas.
- Transfer the tortilla to the griddle - cinnamon sugar side down. Top the plain side of the tortilla with the chocolate, marshmallows, and crushed graham crackers.
- Once the tortilla is golden brown on the bottom and the chocolate and marshmallows are melted, fold the tortilla in half.
- Transfer the quesadilla to a cutting board. Slice it into wedges and serve.
Variations and serving ideas
- Use peanut butter cups in place of milk chocolate bars.
- Substitute hazelnut spread and marshmallow fluff.
- Try different varieties of chocolate such as dark chocolate or chocolate caramel squares.
- Use cinnamon or chocolate graham crackers.
- Serve with a scoop of vanilla ice cream.
- Dust with powdered sugar or top with whipped cream and a cherry!

Ingredients
- ¼ cup granulated sugar
- 2½ teaspoons ground cinnamon
- 1 tablespoon unsalted butter
- 2 flour tortillas (8-inch)
- 2 1.55 ounce bars milk chocolate bar
- 8 large marshmallows (cut in half)
- 4 graham cracker squares (broken into smaller pieces)
Instructions
- Heat a griddle over medium-low heat.
- In a small bowl, add the sugar and cinnamon and mix together.
- Spread butter on one side of the tortilla. Sprinkle generously with cinnamon sugar. Place tortilla, butter side down, on the griddle.
- On one half of the tortilla, top with one chocolate bar and one graham cracker square broken into pieces. On the other half, top with half of the marshmallows and another graham cracker square broken into pieces.
- When the tortilla is golden brown and the chocolate and marshmallows are soft and melty, fold the tortilla in half. Transfer it to a cutting board. Slice into wedges. Repeat with the other tortilla.
- Serve with ice cream, powdered sugar, or whipped cream if desired.
Notes
- Save extra cinnamon sugar to use on your morning toast.
- Try swapping in peanut butter cups for the chocolate bars. If desired, use hazelnut spread and marshmallow cream in place of chocolate bars and marshmallows.
