These no-bake edible funfetti cookie bites have a sugar cookie base filled with plenty of festive sprinkles. All the deliciousness of cookie dough in a safe-to-eat sweet treat.
If you love cookie dough as much as cookies themselves, these edible funfetti cookie dough bites are a must-try! They are quick and easy - no need to stand at the oven baking pan after pan of cookies.
A few tweaks to traditional cookie ingredients is all it takes to create a safe-to-eat raw dough that you can be enjoying in minutes.
Why these cookie dough bites are so good
Is cookie dough safe to eat?
Cookie dough is a wonderful treat, and with a few modifications, it is completely safe to eat.
- No raw eggs. Eggs can contain salmonella if eaten raw, so we will omit the eggs. In baked goods, eggs give structure which isn't necessary for an unbaked treat.
- Use heat-treated flour. Raw flour can also carry bacteria. We will eliminate this risk by heating the flour - I'm sharing two methods below.
- Omit baking soda and baking powder. These leavening agents help baked goods rise. Since we're making unbaked cookie dough, these ingredients are not necessary.
Ingredients
Edible funfetti cookie dough comes together with staple ingredients that you likely have on hand.
- Butter - Be sure to start with softened, room-temperature butter for easy mixing.
- Granulated and powdered sugar - White sugar gives the dough the sugar cookie vibe. Powdered sugar adds sweetness but also gives the dough a soft, smooth texture.
- Vanilla extract - A must for enhanced flavor! Almond extract is delicious too!
- Milk replaces the moisture that eggs normally provide.
- Sprinkles add a fun vibe to these bites. Choose rainbow sprinkles or seasonal ones for festive holiday-themed cookie dough.
Heat-treating flour
Raw flour can carry bacteria which is normally killed when cookies and other baked goods are baked. Since we're making edible raw cookie dough, we want to heat the flour to kill this bacteria before adding it to our scrumptious dough. This is easy to do in a few simple steps.
Oven method:
- Measure out the flour and spread it on a parchment-lined baking sheet.
- Bake at 350 degrees until the temperature of the flour reaches at least 160 degrees. This should take approx. 5 minutes. An instant-read thermometer is perfect for this.
Microwave method:
- Add the flour to a microwave-safe bowl.
- Heat on high, in 30-second intervals, until the temperature of the flour reaches at least 160 degrees.
For both methods, allow the flour to cool, then sift. Since the flour tends to clump together when heated, sifting it before adding it to the cookie dough ensures a smooth consistency.
PRO TIP: Heat-treat a larger batch of flour. Once cooled, store in an airtight container in your pantry to use in other no-bake recipes.

Making the cookie dough

- Add the butter and sugars to the bowl of a stand mixer. Mix until fully combined and light and creamy, approx. 2 minutes.
- Add the milk and vanilla extract. Mix to incorporate.
- Add the flour and salt and mix until just combined.
- Fold in the sprinkles.
- Using a small cookie scoop, portion the dough onto a parchment-lined baking sheet. A two-teaspoon-sized scoop creates a nice bite-sized morsel.
- Chill for 30 minutes to firm the dough slightly. Roll the dough into a smooth ball or leave it as is for a more rustic look. If desired, roll the bites in sprinkles to create "cookie dough truffles".
- If you're feeling extra indulgent, skip the chill and just scoop the dough into a bowl and dig in with a spoon!
Storing
This dough has a soft texture and retains the perfect eating consistency when stored in the refrigerator. Store in an airtight container with parchment paper in between the layers.
The dough can also be frozen. Scoop the dough balls onto a parchment-lined sheet pan. Place in the freezer until firm. Then transfer the balls to a freezer-safe zipper-top bag and store them for up to 2 months. Eat the dough frozen or thaw it in the refrigerator to soften.
