Tortilla chips layered with the flavors of a Reuben sandwich - corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing. A delicious twist on a classic appetizer.
On a sheet pan, arrange half of the tortilla chips. Top with half of the cheese, corned beef, and sauerkraut. Top with the other half of the chips, corned beef, sauerkraut, and cheese.
Bake for 10-15 minutes until cheese is melted and tortillas are slightly brown around the edges. Drizzle the dressing over the top. Garnish with scallions. Serve with extra dressing.
Notes
To reheat, place the Reuben nachos on a sheet pan and place in a 400-degree oven for 5-10 minutes until the cheese is melted and the chips are crisp.
