5ouncesgarlic and herb cheese spread, like Boursinsoftened to room temperature
¼cupsun-dried tomatoesdrained and chopped
sea saltfor garnish
Trim the ends off of the cucumber. Peel the cucumber in alternating stripes, if desired. Slice the cucumber into ½ inch slices. (One large seedless cucumber should yield about 18-20 slices). Set aside.
Add the softened cheese to a bowl and stir until smooth. Add to a piping bag fitted with a tip. Pipe the cheese onto each cucumber slice. Top with sun-dried tomato and fresh basil. Sprinkle with sea salt, if desired. Serve.
