These no-bake edible cookie bites have a sugar cookie base filled with plenty of festive sprinkles. All the deliciousness of cookie dough in a safe-to-eat sweet treat.
Add the butter and sugars to the bowl of a stand mixer. Mix until fully combined and light and creamy, approx. 2 minutes.
Add the milk and vanilla extract. Mix to incorporate.
Add the flour and salt and mix until just combined. Fold in the sprinkles.
Using a small cookie scoop, portion the dough onto a parchment-lined baking sheet. (Note 2)
Chill for 30 minutes to firm the dough slightly. Roll the dough into a smooth ball or leave as is for a more rustic look. (Note 3)

Raw flour can carry bacteria. So, when using flour in no-bake recipes, it's best to heat-treat the flour to kill any possible bacteria. Use one of two methods. Oven method: Spread the flour on a baking sheet lined with parchment paper. Bake in a 350-degree oven until the temperature of the flour reaches at least 160 degrees. This takes approx. 5 minutes. Cool completely and sift before adding to the recipe. Microwave method: Add the flour to a microwave safe bowl and cook on high, in 30 second intervals, until the temperature of the flour reaches at least 160 degrees. Cool completely and sift before adding to the recipe.
A two teaspoon-sized scoop creates a nice bite-sized morsel.
If desired, roll the bites in sprinkles to create "cookie dough truffles". If you're feeling extra indulgent, skip the chill and just scoop the dough into a bowl and dig in with a spoon!
