Toasted sandwich rolls are filled with juicy chicken, tomatoes, and mozzarella. A slathering of pesto mayo brings all of the flavors together. This sandwich is perfect for lunch or dinner.

1cuphalved grape tomatoes
¾cuppearl-sized fresh mozzarella balls
5tablespoonsbasil pesto(divided)
¼cupmayonnaise

Instructions
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Season the chicken with salt, pepper, onion powder, and garlic powder. Place the chicken on the prepared baking sheet. Bake for 10-20 minutes until the internal temperature of the chicken reaches 165 degrees. Let rest for 5 minutes before cutting the chicken into bite-sized pieces.
In a mixing bowl, combine the cubed chicken, tomatoes, and mozzarella. Toss with 2 tablespoons of pesto.
Toast the rolls. Meanwhile, mix together the mayonnaise and the remaining pesto. Spread this mixture on the inside of the rolls.
Fill the rolls with the chicken mixture. Garnish with fresh basil.
