Instructions
Add the softened butter to a small bowl. Using a microplane or grater, grate the garlic cloves and add to the butter. Add the Parmesan cheese and parsley. Stir until well combined.
Preheat a skillet over medium-low heat.
Spread one side of each slice of bread with ¼ of the butter mixture. Place two slices of bread buttered side down in the pan. Top each slice with two slices of Colby and two slices of gouda. Top with the remaining two slices of bread, buttered side up.
Cook for 3-5 minutes per side until golden brown. After flipping, cover the pan with a lid to help the cheese to melt, if necessary.
Notes
Use medium-low heat so the cheese has time to fully melt without burning the outside of the sandwich.
