In a large mixing bowl, combine the turkey, soy sauce, hoisin sauce, sesame oil, garlic, ginger, and Chinese 5 spice powder.
Using a fork or spatula, gently mix the turkey and seasonings until just combined. Form into 4 patties. Chill for 15-20 minutes.
Preheat a non-stick skillet over medium heat with 1-2 teaspoons of oil. Add the burgers and cook for 5-6 minutes until golden brown. Flip. Cover and cook for another 5-6 minutes until the burgers reach an internal temperature of 165℉.
Meanwhile, in a small bowl, combine the mayonnaise with the soy sauce, ginger, garlic, sesame oil, vinegar, scallions, and red pepper flakes. Stir to combine.
To build the burgers, layer pea shoots on the bottom bun. Place a burger on the pea shoots, top with the mayo and shaved cucumbers and carrots. Add the top bun and serve.
Notes
Chilling the burgers helps them to stay intact when cooking.
To grill, cook the burgers on a grill mat which will prevent the burgers from sticking and falling through the grates.
