In a small bowl, combine the chili citrus seasoning, onion and garlic powder, salt and pepper. Sprinkle evenly over both sides of the chicken.
Heat an oven-safe skillet over medium heat. Add the oil and the chicken. Cook for 3-5 minutes until golden brown. Flip and cook for another 3-5 minutes.
Transfer the skillet to the oven and cook for 10-15 minutes until the internal temperature of the chicken reaches 165 degrees. (Note 1)
Meanwhile, combine the mango, red onion, chives, and lime juice in a small bowl. Toss together. Season to taste with salt.
Spoon the salsa over the chicken and serve.
Notes
The actual cook time will vary depending on the size and thickness of the chicken breasts. Always use an instant-read thermometer to ensure the chicken reaches the safe temperature of 165 degrees. For small chicken breasts, start checking the temperature after 7-8 minutes.
For variations, add jalapeno to the salsa, use blackened seasoning on the chicken, swap pineapple or strawberries for the mango, or use pork or fish in place of chicken.
