Step-by-step instructions

Step 1: Melt butter in skillet over medium heat and add carrots, onion, celery, and thyme.
Step 2: Cook the veggies until they are softened, approx. 12-18 minutes.
Step 3: Add flour and stir to coat the veggies. Cook for 1 minute.
Step 4: Slowly stir in chicken broth and milk, stirring constantly to create a smooth sauce. Cook for 2-3 minutes until the sauce thickens.
Step 5: Stir in the cooked chicken. Reduce heat to low.
Step 6: Top the mixture with cheddar cheese and cover to melt.

- 4 tablespoons flour
- 1 cup low-sodium chicken broth
- 1 cup whole milk
- 3-3½ cups cubed cooked chicken breasts (approx. 1¼ pounds boneless skinless chicken breasts)
- 1½ cups shredded cheddar cheese
Instructions
- Bake the tater tots according to the package directions.
- Meanwhile, heat a skillet over medium heat. Add the butter to melt. Stir in the onions, carrots, celery, salt, pepper, and thyme. Cook until the vegetables are tender, stirring occasionally, approx. 12-18 minutes.
- Stir in the flour and cook for 1 minute to cook out the raw taste of the flour. Slowly add the broth and milk, stirring constantly to create a smooth sauce. Simmer for 2-3 minutes to thicken the sauce.
- Stir in the chicken and simmer for another minute. Top with the shredded cheese. Once melted (cover with a lid to melt quickly), arrange the crispy tater tots on top and serve.
