Why you will love this
- Ripe summer peaches are wonderfully sweet on their own. If you haven't tried grilling them, you are missing out on a truly delectable treat. Grilling only enhances a peach's natural sweetness and makes it even more juicy.
- After grilling dinner, why not throw dessert on the grill too? It's so easy and clean-up is a breeze. Fruit is the perfect summer dessert - easy, light, and refreshing.
- Serve these grilled peaches with goat cheese and honey as the finishing touch to a meal of Easy Grilled Chicken Tenders or Grilled Jerk Shrimp, and Grilled Fingerling Potatoes.
Ingredients
- Peaches - Summer fresh peaches are perfect for grilling. Nectarines are another good option.
- Honey - A drizzle of honey over the warm peaches is just divine. Agave works great too. The peaches can also be sweetened with simple syrup like this Cinnamon-Anise syrup.
- Fresh mint and thyme - Fresh herbs add so much freshness and delicious flavor.
- Goat cheese - I love the combination of fruit and cheese, so I like serving some of the peaches with a small scoop of goat cheese. The tang of the cheese is a nice balance to the sweetness of the fruit. This is completely optional if you don't love goat cheese or prefer your fruit without cheese altogether.
Instructions for grilling peaches
- Preheat the grill to medium.
- Cut the peaches in half and remove the pit.
- Place the peaches, flesh-side down, on the grill. Grill for 4-6 minutes or until caramelized and warm throughout.
- Meanwhile, add the honey, fresh mint, and thyme to a saucepan. Heat over medium-low heat to infuse the honey with the herbs. Strain the honey.
- Serve the peaches with a spoonful of goat cheese (if desired) and a drizzle of honey.
Serving ideas
Appetizer - Add these peaches to a cheese board, layer them on ricotta crostini, or serve them alone as a tangy-sweet start to a summer meal.
Dessert - These grilled peaches are the perfect light bite to satisfy your after-dinner sweet tooth. For an alternative serving option, skip the goat cheese and serve with a scoop of vanilla ice cream.
