I discovered chia seed pudding several months ago. I was familiar with using chia seeds in energy balls, but I hadn’t experimented with them beyond that. Chia seeds are loaded with nutrients, so it is exciting to find new ways to incorporate them into recipes.
This pudding involves combining chia seeds with milk and some sort of fruit, flavoring, or other add-ins. I like to use whole milk if I have some on hand, otherwise, I use skim milk. Almond milk or coconut milk can also be used. After chilling overnight, the chia seeds plump up in the milk to create a pudding consistency. The pudding is filling and satisfying and can be eaten for breakfast, dessert, or as a snack.
Chocolate Almond Chia Seed Pudding
Chocolate almond is one of my favorite flavor combinations, so I love making this chocolate almond version. First, I combine the chia seeds and milk. Next, I add cocoa powder, some honey for sweetness, and almond extract. After stirring to ensure the ingredients are well incorporated, I refrigerate the pudding overnight until thickened. These puddings are easy to prepare, are delicious, and the chia seeds provide so much nutrition.
Chia seed pudding can easily be made in larger batches and refrigerated in individual portions. Then it’s ready for a grab-and-go breakfast, a quick snack, or dessert. The flavor combinations are endless, so you can incorporate your family’s favorite flavors.

- 1 cup milk
- 3 tablespoons chia seeds
- 1 tablespoon cocoa powder
- 1 tablespoon honey
- 3/4 teaspoon almond extract
Add all of the ingredients to a glass jar, such as these. Stir until well combined. Refrigerate overnight until thickened. Stir and serve.
