- Bread - There are so many delicious options. I used bakery-style Italian bread. Try sourdough, rye, pumpernickel, or even olive bread for a tasty twist.
- Cheese - I'm going classic cheddar here - I like the contrast of yellow cheddar with green broccoli. But you can use any variety of cheese you love. Be sure to pick a variety that melts well and shred the cheese fresh for the best melting quality. Try white cheddar, Colby, Monterey, Pepper Jack, or Gruyere.
- Broccoli - Fresh broccoli florets are a must for optimal texture. We don't want any soggy broccoli here!

Ingredients
Roasted broccoli
- 6 cups fresh broccoli florets (cut into bite-sized pieces)
- 1 tablespoon olive oil
- salt and pepper (to taste)
Bread
- 4 slices bakery-style Italian bread (or similar)
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 425℉.
- Place the broccoli florets on a sheet pan and toss them with 1 tablespoon of oil and season with salt and pepper. Roast for 15-20 minutes until slightly charred and crisp-tender. Set aside.
- While the broccoli is roasting, add 2 tablespoons of oil and garlic to a small saucepan. Warm over low heat to infuse the oil with garlic flavor.
- Brush the oil on one side of each slice of bread. Season with salt and pepper. Transfer the bread to a sheet pan and bake for 8-10 minutes until lightly brown and crisp.
